One tuille, two tuilles, three tuilles, four


I am once again in the kitchens at school this week. Our class is tackling the final large event before graduating! So... this week my lovely readers will be subjected to what ever is produced in the kitchen, or I find interesting enough to blog about. Today I was prepping and one of my fellow classmates was laying out her assortment of tuilles, I loved the texture and the piles so I photographed it. ( yes, I do bring my camera into the kitchens you never know when you'll find that perfect shot!)
Tuilles are simple to make and are a beautiful vessel for just about any confection. My personal favorite is tuille bowl with a scoop of raspberry sorbet garnished with fresh raspberries! Yummy!!! Simple, elegant and yes they are easy to make!!


Tuilles
Recipe adapted from Mary Bergan Food Network

10 ounces unsalted butter
1 1/4 cup granulated sugar
1 vanilla bean, scraped
6 egg whites (large AA)
2 cups all-purpose flour

In a standing mixer with paddle, cream butter and sugar until light and fluffy. Split and scrape vanilla bean into the mixture. *Do not use pod - only the seeds. Mix well and add whites and flour. Mix well and chill covered with plastic wrap, preferably overnight.

Baking: Spread about 1 teaspoon cold tuille batter thinly in a circle on greased back of cookie sheet. Place tuilles in 350 degrees oven. Tuilles will spread and cook rapidly. Therefore, test a few, one at a time, for appropriate thinness of batter and length of cooking time. If tuilles have spread too much, reduce amount of batter and make sure batter is spread evenly and thinly. Tuilles should be removed from oven when slightly golden. Let set for a few seconds then place tuille over top of small inverted bowl. Let cool. Remove from back of bowl and turn over. You now have a tuille bowl to fill with your favorite ice cream, sorbet or mousse.

I guess if blogs were in when I went to culinary school we would have seen them clicking away...great idea for them too!

My class is going to a Farmers Market this week, and buying their own ingredients...

At first glance I thought they were homemade potato chips! Boy was I off or what?
