Tuesday accompiaments

It's Tuesday! Time for some side dishes to accompany our Tuscan feast. When I make chicken I always try to make a potato or rice to go with it, you definitely need something to absorb all those flavorful juices after the chicken is done cooking! So here goes....

Basmati rice

All rice recipes are pretty much the same 2:1 ratio which means
2 cups water
1 cup rice ( I like to use basmati, jasmine or long grain)

Cook according to directions on box or bag
sprinkle with mccormick seasoning from Tuscan chicken recipe


Baked Asparagus

1 lb. fresh asparagus
2-3 tsp. olive oil
1-2 tsp. sea salt

Preheat oven to high on broil setting. Arrange asparagus on baking sheet with parchment paper. drizzle olive oil over top of asparagus and sprinkle with sea salt. Broil for approximately 10-12 minutes until slightly soft when pricked with a fork.

Serve with Tuscan chicken and a warm baguette
Serves approximately 4-6 persons
