Fabulous lemon tart Wednesday

It's Wednesday and that means my favorite part of the meal...dessert! I make this frequently for dinner parties, it's one of my favorites. The recipe makes 2-8 inch tarts, so share the other with a neighbor or freeze for later.
Barefoot Contessa Parties
Lemon Bars ( or tart as I made it)

Crust
2 sticks of butter room temperature
1/2 cup sugar
2 cups all-purpose flour

Filling
6 large eggs at room temperature
3 cups sugar
2 tbsp. grated lemon zest
1 cup lemon juice
1 cup flour
Preheat oven to 350

Crust
Cream together butter and sugar in mixing bowl. Add flour and salt to mixture until just combined into a dough. Flour hands and press 1/2 of the dough into a 8 inch tart pan with a removable bottom. Make sure to bring dough all the way up the sides of the pan! Chill for 30 minutes. Remove from fridge and bake crust unfilled for 10-12 minutes until very light brown. Remove from oven and make filling.

Filling
Whisk together eggs, sugar, lemon zest,lemon juice and flour. Pour 1/2 of mixture over crust. Bake for about 30 minutes until filling is set.

Remove and chill overnight
Serves 6-8 persons
