Roasted Carrot Medley with Honey Vinaigrette

I need to finish a few other commitments up today. A new monthly menu, inventory list, yearbook photo editing and a few other "to do" items I can't remember right now. I'm sure that I will remember much later tonight. ( when I don't want to do it anymore) Doesn't it always happen like that?

So..... today I will simply present you with a photo and a recipe. A simple, delicious, easy to assemble mid-week recipe. I hope you enjoy!
Roasted Carrot Medley with Honey Vinaigrette
Adapted from Delicious Magazine

8 oz. carrots peeled and cleaned
6 red carrots (cleaned and sliced)
1/2 can garbanzo beans
2 tbsp. cilantro
olive oil

2 tbsp. white vinegar
2 tbsp. honey
1 garlic clove ( finely chopped)

Clean carrots and slice in half. Place on baking sheet, drizzle with olive oil. Sprinkle with salt and pepper. Halfway through baking add garbanzo beans to baking sheet. Return to oven for remaining 10 minutes. Bake at 425 for 20-25 minutes until soft. Remove from oven.

Assemble vinaigrette and whisk to mix.

Place carrots and beans on serving plate and drizzle with vinaigrette. Sprinkle with chopped cilantro and enjoy!

I love it. I don't have red carrots but I could make do with just the regular ones. Thanks for sharing, Sarah!

This looks like quite a sophisticated dish. I love the deep colors and contrast the carrots add.

I don't think I've ever seen red carrots. Does Whole Foods carry them?
I love the looks of this dish; imagine I could make do with regular carrots.

Barbara and Natasha-
I found red carrots at the farmers market and I have seen them at the grocery store. However here we tend to get new products first, so maybe you will see them this summer in your areas! Whole foods is a great place to look for them too!

How did this one slip past my rss reader? I saw it on someone else's blog roll and rushed right over.Missing this would have been a tragedy. It is so my style. I can just see you picking out those carrots on a Sunny San Diego morning at the Farmers Market.

The honey vinaigrette you made sounds delicious and the perfect combination with the carrots. Thanks for sharing!

Just like everyone here, those red carrots caught my eye - and I'm not a carrot fan! However, I can imagine that roasting releases all that wonderful sweetness and that the honey vinaigrette only amplifies it. I'm all aboard for sweet, roasted veggies!
