My last post was plated beautifully and the flavors complimented one another well. However, it did have a few more steps than I would normally take on a weekday night. During the week I like to keep my dinners simple. What could be more basic than steak? Paired with a salt-baked potato and a crusty roll it's a quick and easy dinner that can be on the table in less than 20 minutes. ( No, I didn't include veggies, my husband politely turn them down) Feel free to add a steamed vegetable of your choice.
Twenty minutes for a steak dinner on the weekdays? Yes, you can do it, and I'm here to show you how.....
Fire up the grill, heat to 400 degrees. Begin with your favorite cut, I used porterhouse because they had them on special that day. They were about 1 1/2 inches thick and bone-in. Salt and pepper each side of the steak to season. Set aside.
Wash 4 russet potatoes well. Roll the potato in sea salt, coating the skin of the potato. Place in microwave for 8-10 minutes depending on size of potato.
Place steak on grill. Grill each side approximately 4 minutes. If your steak is thicker add one more minute for each 1/2 inch of thickness. Remove from the grill and let the steak rest for 5 minutes. The steak will be perfectly medium rare. If you would like your steak less rare ( shame on you) then you will need to add a minute or two to your cooking time.
While waiting for the steak to rest, place your favorite pre-made roll or bread into the oven at 350, the bread should be crusty and warm in about 5 minutes. Just in time for the steak!
With two minutes to spare, plate your steak. Bring on in the baked potato and dress it with your favorite toppings ( I like some butter, creme fraiche and a sprinkle of chives) Throw on your warm crusty roll and your dinner is officially ready in under 20 minutes.

4 12-15 oz. porterhouse steaks ( or substitute your favorite)
2 tsp. salt
1 1/2 tsp. pepper
4 russet potatoes ( well scrubbed)
2 tbsp. sea salt
your favorite baked potato toppings
4 bakery rolls

This is a wonderful way to get the meat to the table, but the no vegetable is a bit upsetting to a non-vegetarian veg-head like me! The man must have arteries of steel! GREG

That's one of our favorite weeknight quickies. And yes, I've been known to pass on a green veggie too, but a potato with skin on is must more nutritional than some think.
I have beef meat less often now, thoug I always appreciate a good steak. Your steak makes me hungry!
