Bright and Lemony Tomatillo Salsa


I love food with heat and spice. I am not talking about food so hot that the flavor is overpowered, but heat and spice that enhances the flavors of the dish. Mexican food fulfills this desire in many ways for me.
We are relatively close to Mexico here in San Diego. The Mexican influence is prominent, inexpensive and authentic Mexican food is available abundantly. Carne Asada is by far one of my favorite " cheap eats".
Carne Asada is a flat steak that has been marinated in a variety of spices, it is usually served with beans, grilled vegetables and a fresh corn tortilla. I could eat them everyday!
Mexican culture influences the markets and I have discovered many unique ingredients, one of them being tomatillos. Tomatillos are similar in size and shape to a small tomato. They have the texture of a green tomato but with a bright lemony flavor. They are the perfect addition to salsa.

Tomatillo Salsa

5 whole tomatillos
2 Roma tomatoes
3 cloves garlic
1 whole jalapeno
2 tsp. lime juice
3/4 tsp. sea salt
1/2 tsp. ground pepper
2 tsp. cilantro chopped

Remove husks from tomatillos and wash to remove sticky residue. Remove stem and a small amount of the top. Remove top from Roma tomato. Place both tomatoes and tomatillo in the food processor. Peel garlic.Slice and remove seed and top from jalapeno. Place garlic, jalapeno, lime juice, salt pepper and cilantro in with tomato mixture.
Pulse in food processor until smooth but still has texture.
Remove from food processor and place in serving bowl.
Serve with fresh corn tortilla chips

I also love a salsa of ALL tomatillos! While your out the dining in cheap but delicious Mexican seek out a torta al pastor! Fantastic...The at my local taco truck is $4.00 and feeds two at my house! GREG

I would of prefered an all tomatillo salsa but the only way I could get the kids to try it was the addition of red tomatoes :)
