Chunky tomato sauce with linguine

We all love convience foods, they make our lives easier!
There are many times when making a simple food from scratch is much more flavorful and the time involved is minimal. Rustic tomato sauce is one of the items! It's simple to make and the end result is so much better than store bought!
Tomato season is just a month or two away. What better way to use up all those lovely farm fresh fruits than in a summery pasta!

Chunky tomato sauce with linguine

5 whole tomatoes
1/4 cup good extra virgin olive oil
2 cloves of garlic chopped
2 tbsp. fresh oregano
2 tbsp fresh basil
1 tsp. fresh thyme
salt and pepper to taste
1/2 lb. dried linguine
fresh grated Parmesan to garnish
fresh basil to garnish

Dice tomatoes. Heat saute pan on medium-low add olive oil and chopped garlic. Saute until lightly browned. Watch out, garlic burns quickly! Roughly chop oregano, basil and thyme. Add to the garlic and tomatoes. Simmer om medium heat 15-20 minutes. Salt and pepper to taste.
Cook linguine in salted water approximately 12 minutes. Drain and add to tomato sauce, toss to incorporate.
Serve in shallow bowls and garnish with Parmesan and fresh basil.
*Pair with a red table wine and a fresh baked garlic batard

Home-made tomato sauce is worth every moment of the making. One of the best things. Ever.

I love homemade tomato sauce! And the best thing? You can make a huge batch, freeze it, and have it during the tomato off-season!

I love homemade tomato sauce, I make big batches and freeze it so I always have some on hand.

The sauce sounds great but what the heck did you do to those tomatoes? Wash, wax, buff, and armorall them? I've never seen such perfect specimens! :)

It's a post like this that makes me ashamed that I still rely on the bottled stuff! What is wrong with me? Well, we've just planted our tomatoes so hopefully I will soon be making my own sauce with my own tomatoes. Beautiful photo!

I alays make my tomato sauce for my pasta, I store some in a glass jar n the fridge for later use (or freeze it). So much better!

I can't wait for the first of every fruit of the season. Right now, I'm impatiently waiting for those first, ripe strawberries. Which, by the way, work very well with tomatoes. It will be a little while yet for ripe tomatoes here though!
