Raspberry-Pomegranate Granita

Summer is right around the corner!
Summer means bringing out the patio furniture, setting up the big farm table and bistro chairs and stringing up the globe lights to give a soft glow to the backyard. Sounds like heaven doesn't it! Summer also brings dinners outside with light refreshing desserts and a glass of wine, I can't wait.

Raspberry-Pomegranate Granita


2 cups raspberry juice
1 cup pomeganate juice
1/4 cup chambord ( raspberry liquour)

Mix together raspberry juice, pomegranate juice and chambord. Pour into a shallow baking dish and place into the freezer. Scrape the liquid with a fork each hour until frozen and crystalized. ( It will look like shaved ice when you are finished) The entire process takes about three hours, scraping the mixture each hour.


Serves 4



Serve the granita with my favorite dessert wine. Chateau Peyruchet is a light and sweet dessert wine with undertones of vanilla and apricots. It is very reasonably priced at $18 a bottle.

Although I'm entering in winter I love this type of refreshing desserts-always- excellent combination of flavors.
I didn’t tasted this specific wine but seems great :)
