Green salad with pomegranate-lime vinagrette


I was peeking into the refrigerator this morning and realized I still had a few containers of POMwonderful pomegranate juice (http://www.pomwonderful.com/). What should I use them for? Hmmm... Chefbliss (http://www.chefbliss.com/) has some fantastic drink recipes, however it is 3pm maybe a little early for drinks! I then remembered that I have a fantastic vinaigrette recipe that I adapted from barefoot contessa, what if I add some POM juice and lime? The results were light and fruity, a perfect spring salad dressing!

Green salad with pomegranate-lime vinaigrette
adapted from barefoot contessa cookbook

Mixed greens (washed and dried)
1/2 cucumber (sliced)
1/2 red onion (sliced finely)

Dressing
1 teaspoon Dijon mustard
1 teaspoon minced fresh garlic
3 tablespoons POM wonderful juice
1 Tbsp. fresh lime juice
1/2 tsp. sugar
Kosher salt and freshly ground black pepper
1/2 cup good olive oil

Whisk mustard, garlic, Pom juice, lime juice, and sugar together in a bowl. Add salt and pepper to taste. Transfer to food processor and slowly add olive oil until combined. Toss salad with dressing or serve on the side!

I made a pom dressing today too! Pom juice, hazelnut oil, salt, pepper. It was delicious.
