Pom wonderful tiramisu

Pom wonderful Tiramisu
6 egg yolks
1 1/4 cups sugar
12 oz. marscapone cheese
1 cup heavy cream
1 cup POM wonderful pomegranate juice
3 packages lady fingers
1 cup coffee liquor
Whisk together egg yolks and sugar until pale yellow in color. Heat in a bowl over boiling water whisking constantly for 6-8 minutes. Set aside and let cool to room temperature. Once cool mix in marscapone cheese until incorporated. Beat heavy cream and pom juice in mixer until soft peaks form. Add to marscapone mixture, fold gently until incorporated. Set aside.
Dip the bottom of the lady fingers into bowl containing coffee liquor, line bottom of ramekin with a layer of lady fingers. Add layer of marscapone mixture. Continue layering until the last layer is the marscapone mixture. Chill 24 hours, lightly dust with cocoa powder before serving.
* The tiramisu becomes more flavorful with age, it is best to make ahead of time! I've made many desserts over the years, but I actually sat down with my friends to talk and ate 2 of these, yes! they are that good!!!

I agree, I would have never thought tiramisu... I added it too my Ethiopian eggplant and forgot to mention it...

Marvelous! I received my samples, too (hence the POM salad dressing) but I'm nowhere near you in coming up with something as fantastic as this. Perhaps I'll just follow your recipes and provide testimonials! 8-)
