Chocolate Butterscotch Parfait

Chocolate pudding
adapted from Tyler Florence
2 cups whole milk
1/2 cup sugar
1/3 cup natural cocoa powder
4 teaspoons cornstarch
3 large egg yolks
2 teaspoons pure vanilla extract
1/4 teaspoon sea salt

Heat 1 1/2 cups of the milk, all the sugar and the cocoa powder until just simmering. Combine remaining milk, cornstarch, egg yolks, salt and vanilla in bowl. Slowly add a small amount of the hot milk to the egg mixture, stirring constantly. This is called tempering. ( so you don't get scrambled eggs, when you add the egg mixture to the milk) Slowly add the tempered egg mixture to the hot milk, whisking constantly. Bring to boil at medium high heat, turn heat down to simmer and stir constantly 2-3 minutes more until thickened. Cool slightly and pour into parfait glasses, filling halfway. Refrigerate until set 1/2 way about 2 hours. Add second layer of butterscotch pudding. ( recipe below)

Butterscotch pudding

Recipe adapted from Gail Gand

2 1/4 cups milk
1 cup heavy cream
6 tablespoons unsalted butter
1 1/4 cups light brown sugar, packed
3 egg yolks
1/4 cup cornstarch
1/4 teaspoon salt
1 1/2 teaspoons vanilla

Heat milk and cream to a simmer, set aside. Melt butter in a pan, add brown sugar. Cook over medium high heat until caramelized. 5-6 minutes. Slowly add the cream mixture to the caramel mixture and whisk until smooth. Return to medium heat. Combine egg yolks, salt and cornstarch. Temper mixture ( as I described with the chocolate pudding) and add mixture to caramel milk. Heat at medium stirring constantly until thickens 2-4 minutes. Add vanilla and whisk into mixture. Remove from heat and cool. Pour mixture into the second half of parfait glasses. Chill overnight.


Whipped Cream

1 pint heavy cream

1/4 cup sugar

Pour cream into kitchen aid add sugar, beat until soft peaks form. Remove and top pudding.

I freakin' love butterscotch.. Dutch have a version of a butterscotch hard candy- babbelaars! I grew up on them!

Oh wow, you just stepped out of my realm of cooking, lol...goodness how I used to love pudding, but it does not love me back anymore :( I would eat yours if you passed me one!
