Sundried tomato twice baked potato

I know this isn't very gourmet, but we are cooking for our special guy in our lives for valentine's day. I don't know about your special person, but mine recently did a 25 thing you may not know about me for facebook. Number 11 was " my wife is a trained chef and my favorite meals are hamburger helper and chicken with rice." Need I say more?! So here is a satisfying side that any special someone is sure to enjoy.


Twice baked potato with sun dried tomato feta


4 large baking potatoes
3 tsp. butter
3 tsp. milk
1/2 cup sour cream
1/4 cup feta cheese with tomato and basil
1 1/2 tsp. salt
1/2 tsp. pepper

Wash your spuds please!

Prick with knife 3-4 times to let steam escape while cooking

Microwave (yes I said microwave) for 10-12 minutes until cooked through

Cut into halves length wise

Scoop out insides of potatoes with a spoon and set aside in a bowl

I acquired this lovely lady as a gag gift at a recent dinner party, but I really think she's super cute. So she will be joining us in our next few photos

Add all the remaining ingredients to the potatoes, milk,sour cream. feta cheese, butter, salt and pepper

Mix together ingredients with a spoon, don't worry about lumps they are supposed to be there. We want the potato mixture to have texture and not be smooth like mashed potatoes

Secret ingredient

Spoon mixture back into potato skins. When you began you would of had 8 halves but because we are overfilling the skins, the mixture only fills 6 halves. Feed the dog or compost the extra potato skins
