Chocolate truffles one day late

So sorry to anyone who reads on a regular basis! I have a tasting dinner at school that has been all consuming! I thought since it is valentine's week I should create something chocolate! Chocolate truffles are by far one of my favorites.

Chocolate Raspberry Truffles

2 cups good chocolate
1 cup heavy cream
2 tsp. butter
2 tsp. raspberry puree or liquor


Pour heavy cream into saucepan



Heat on low heat until cream just simmers

Place Chocolate in food processor

Food process until coarse ground


Add hot cream to ground chocolate and process until smooth and combined



Melt butter



Add butter to chocolate and mix to combine, add raspberry puree or liquor mix until combined



Refrigerate chocolate mixture at least on hour. Once solid use a small ice cream scoop to scoop out truffles



Melt additional chocolate, place truffles into chocolate. Make sure the chocolate coats the truffle, remove with a fork and let any extra chocolate drip off.



Want to make it extra special roll the truffles in this while the chocolate is still wet


Place on sheet tray lined with parchment paper and refrigerate until set, about 1 hour

I have to say I only tried making truffles once. It did not go well. Now my love brings me french truffles from Trader Joe's for Christmas and Valentines! I may have to make some because he asked me yesterday if they are easy to make!!
