Hawaiian Purple Sweet Potato Chips

As many of you already know the Farmers Market is a constant source of inspiration in my recipes and cooking. This week is certainly no exception! I gathered some interesting produce and of course an arm load of fresh flowers for the holiday table. Pink lemons, baby squash, truffle oil, some beautiful aged balsamic vinegar and of course Hawaiian purple sweet potatoes.

Hawaiian purple sweet potatoes are indigenous to the Japanese island of Okinawan and is related to the morning glory family. The potato is now cultivated in Hawaii and is known as the Hawaiian purple sweet potato.

The Hawaiian sweet potato is low in calories, only 115 per one cup serving, high in fiber and fat free. What a great reason to go and search out a few Hawaiian purple sweet potatoes, plus they taste amazing!
I found a simple recipe for Sweet potato chips with a Creamy bacon dip. Perfect for the upcoming Holiday and New Years Eve parties.

I'm always so intrigued that people living on the other side of the country and enjoy a completely different produce selection this time of year. :) These potatoes look so great and thanks for sharing the bacon dip recipe. Yum!

I've never seen Hawaiian purple sweet potatoes! I will have to ask at Wegmans if they may ever get those. Very neat!

What a beautiful way to use a Hawaiian purple sweet potatoes. Served up with bacon flavored dip is perfect. I just love it!
I have never seen this type of sweet potato but, will be keeping my eyes open at the produce market.
