Flank steak with Gorgonzola Cream Sauce


Where oh where have I been? Let's see.... My family was given the opportunity to move to California and after much consideration we happily accepted. During the last month I have watched the movers load 9 years of collections in a truck destined for 1800 miles away from friends and family, rented a house, sold a house, started to look at land to build a house and drove three days and 27 hours with my best friend, two kids, two dogs, and two bunnies. The Colorado Rockies were by far my favorite place to drive through, amazingly beautiful!
Yes, we could of flown with the company but my dog is 12 and we were very worried that he wouldn't make the flight. It's amazing what we will do for our pets and children.

We arrived at our destination and have been unpacking ever since.... Moving into a home at 23 is way easier than at 33. Much less stuff!

Feeling less cluttered and chaotic I decided to make dinner last night. ( we have been eating out quite a bit lately, the options are unlimited here!) I had flank steak in the fridge, along with some Gorgonzola and cream. There is something so very delicious about creamy blue cheese and perfectly cooked steak.
Gorgonzola Cream Sauce


Flank Steak with Gorgonzola Cream Sauce


1-1 1/2 lb flank steak
1 pint heavy cream
1 tbsp. butter
1/4 lb. Gorgonzola cheese
salt and pepper to taste

Grill flank steak at a medium high heat for 5 minutes on each side. ( we used a charcoal grill with lump hardwood coals but feel free to use the gas grill) Remove from heat and cover with foil, let rest for 5-10 minutes.
Place heavy cream and cheese into a sauce pan and heat to a simmer over low heat until cheese has melted. Slowly stir in butter.
To cut flank steak use a very sharp knife and slice on the bias with the grain in very thin slices. If you cut it against the grain the meat will be tough.

Drizzle sauce over top, serve and enjoy!
Serves 3-4

How exciting to build your dream house! I am not sure at my age we would do that, since hubbys job takes him all over...love the peak at your new home, the stove!

Of course I love the idea of blue cheese and steak! I also found Colorado to be beautiful as well...

Would that "grill" happen to be a Brinkmann Smoke n Pit? Looks like the one my 9 y/o has.

Love the sauce. I think it might go great on a ribeye this weekend!!!
