Decadent Chocolate Cherry Tarts


Chocolate covered cherries are my absolute favorite candy. However, not every chocolate cherry is the same. I like a certain brand that is only offered a Christmas time.
A few months back I made a very rich and decadent dessert, a chocolate flourless cake so delicious it should be illegal! It has the texture and smoothness of a very rich dark chocolate fudge, but it's baked. Alas I can't take credit for the chocolate flourless cake recipe, you can find it at http://www.mrjeffmccarthy.com/. All of his recipes are delicious, but most are scaled for 24 servings. Just cut the recipe in half for non-commercial applications. I also recommend that you use a silicon baking pan or bake in muffin pan lined with paper muffin cup. Spray liberally with cooking spray or they will be impossible to get out! I speak from experience!!! Luckily it was only 50 that didn't make the first cut.
After making all these beautiful cakes I took some home and put them in the freezer to use another time. I found them when cleaning out the freezer recently. I also found some cherry pie filling and a box of puff pastry. Yes, I should clean out the deep freeze more often! But, that's another story for another day so back the dessert. Hmmm, cherries, decadent chocolate cake and puff pastry. I baked the puff pastry, defrosted the cakes and opened the cherry filling. It was a heavenly combination!

Chocolate Cherry Tart

Chocolate flourless cake http://www.mrjeffmccarthy.com/
Pepperidge farms puff pastry shells (bake according to directions on box)
Cherry pie filling
1 pint heavy cream
1/4 cup sugar
1 tsp. vanilla extract
Bake chocolate fllourless cake and puff pastry according to directions. Once puff pastry is cooled remove centers and place chocolate flourless cake in center. Top with cherries and whipped cream. * To make the whipped cream combine heavy cream, sugar and vanilla in mixer and beat on medium high until soft peaks form.
*Keep chilled until served

I will have to make these for hubby. Cherries are in abundance here in Texas, but my friends are not big fans...picture is gorgeous!

What a classic, delicious combination! I wish I could find such surprises when cleaning out my freezer - usually, it's just cold-burned meats and petrified zucchini bread from last summer. 8-)
