Strawberry-Pomegranate Daiquiri

I find that I have not wanted to cook, bake or do anything that requires being indoors. It has been gorgeous outside! 70 degrees and no humidity. Green, lush, full of spring colors and flowers.
The perfect day for a strawberry iced beverage. Combine the strawberries with some pomegranate juice, a few tablespoons of honey and some good rum and you have a great end to a beautiful day.

Strawberry-Pomegranate Daiquiri
Serves 3-4

8 whole strawberries
8 ounces pomegranate juice
4 tbsp. honey
4-6 ounces good rum
2 cups ice
Blend all ingredients together in a blender until smooth. Dip glass in water and rim with sugar. Pour into glass and garnish with fresh mint. Take your yummy beverage, go outside and play with your kids! (or dog)

He is so determined to keep up with the big boys!

Who would want to be inside cooking on a day like this?

I love the colors! and the thought of sipping on this...

I made something yesterday and kept adding wine to get a pink color for the photo, but I realize it has to be pure and not a mixed...as I wanted some color in my dish...

Yes, it is outside our house. We live in a older area of the city where there's lots of mature trees and the neighborhhod takes pride in their lawns and landscaping.

Great drink - just the thing to usher in summer (when the weather finally cooperates)! Your children are lovely and I can't blame you for getting out of the kitchen when they're waiting for you outside on a gorgeous day!
