Molten chocolate cake



Chocolate Molten Cake with Sage whipped cream

Cake recipe adapted from sweet dreams

10 oz. chopped good chocolate ( I like valhrona or calabaut)

8 0z. plus 6 tbsp.

6 egg yolks

6 eggs

3 cups powdered sugar

1 cup flour

Preheat oven to 450 degrees. Melt chocolate and butter in microwave 1-1 1/2 minutes until melted. Stir until combined. In seperate bowl whisk together the eggs and yolks, add sugar and whisk well! Add flour and stir until combined. Spray ramekins with cooking spray liberally! Fill ramekins with mixture and bake immediately! Bake about 5-6 minutes, remove from oven and turn out of ramekins immediately onto a plate. Garnish with piped sage whip cream and enjoy!

Sage Whip Cream

1 pint heavy cream

1-2 sage leaves deep fried

1/4 c. sugar

1 tsp. vanilla bean paste

Deep fry 2 sage leaves until crispy. Crush leaves until almost a powder. Whisk heavy cream until stiff peaks form, add sugar,sage and vanilla bean paste. Whisk until combined! Serve with chocolate cake and fresh raspberries.

Mine is not so great looking sometimes on the plate or my photography skills lack, but I can say the mouth feel and aftertaste are orgasmic,lol

Thanks for coming over, and I experiment with quinoa so often...just tried amaranth grain for the first time, and I cannot wait to play with that too...
