Every fall we round up all our friends for a chili-cookoff. Everyone brings their recipe and a pot of chili. We award 1st, 2nd, and 3rd prize ( usually a chili related prize). I add the side dishes and the beverages. It is so much fun to try everyones recipe and vote on our favorites. I hope you make a chili cookoff an annual affair at your home!
Hot and spicy chili
1 lb. ground beef
1/4 lb. spicy sausage
1 can kidney beans
1 can chili beans
1 can red beans
1 can crushed tomatoes
1 tsp. red pepper flakes
1 tbsp . cumin
1 tsp. salt
2 c. water
Cook ground beef and spicy sausage in large pot on stove. add all remaining ingredients snd stir. Simmer on low heat for 1 1/2 hours, stiring occasionally
Chicken and white bean chili
2 cups cubed cooked chicken
1 can chicken broth
1 jar of enchilda verde sauce
1 tbsp. cumin
2 cans white beans (drained)
1 can crushed tomatoes with jalapenos
Place cooked chicken in to a stock pot. Add all ingredients except one can of white beans. Puree one can of beans in blender or food processor. Add to other ingredients in pot. Simmer 1 hour until thicker and flavors have combined.
