A lazy baking day






We decided to stay home and do nothing today, so after a afternoon of looking at food magazines I decided to make a nice dinner and bake. I invited one of my best girlfriends to come join me in the joy. It was a lovely evening starting with dinner of grilled ribeye, oven baked potatoes and fresh green beans, yum! We then graduated to the important stuff, dessert. Here's the results and the recipes. Enjoy!


Raspberry Chocolate Cookies

2 sticks butter
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp. vanilla
2 1/2 cups flour
1/3 cup cocoa powder
1 tsp. baking powder
1 raspberry filled chocolate bar cut into small pieces
The raspberry glaze
1 1/2 cup powder sugar
2 1/2 tbsp. milk
1 1/2 tbsp. seedless rapsberry preserves
1. Preheat oven to 350
2. In mixer cream sugars, butter until fluffy. Add eggs and vanilla until incorporated.
3. Mix flour, baking powder and cocoa. Add to the butter mixture. Add chocolate pieces and mix until incorporated.
Bake 12 minutes until just set in middle.
4. For the glaze mix powdered sugar, milk and raspberry preserves until combined, drizzle on cooled cookies.
I tried this recipe last night for the first time and I really liked them and would make them again!
